Absolutely stunning (I would dare to add). Now let's all enjoy it together passionately. # BAKED SOAPFISH # Clean the soapfish by removing the entrails but do not remove the scales. Wash it under cold running water. Wash and slice the two lemons. Wash and chop the parsley. Preheat the oven to 190°C. Place the lemon slices at the bottom of a rather large baking dish; set a few aside. Place the fish belly down on the lemon slices as shown in the picture. Drizzle with oil, salt it, and sprinkle with parsley. Place the remaining lemon slices on top of the fish. Bake for about 40 minutes. Remove the dish from the oven. Take the fish and place it on a large serving tray. Remove the skin and portion it. Drizzle each portion with the remaining cooking liquid in the dish.

You won't believe it, but I would dare to say that I completely agree with you. And now, let’s celebrate papillary together thanks to this "poor" but rich recipe. # PANE CARASAU # It’s a thin flatbread, baked twice. It perfectly replaces fresh bread and, when warmed for a few minutes in the oven and seasoned with salt and a drizzle of olive oil, takes the name of pane guttiau, to be served instead of the usual croutons. With a bit of ripe diced tomatoes, salt, oil, and basil, it becomes a delicious and light bruschetta; with pane carasau, you can also prepare a delightful first course typical of traditional Sardinian cuisine. A close relative of pane carasau is pane pistoccu: typical of the inner areas of Sardinia, it has a greater thickness and is rectangular in shape. Pane pistoccu can be consumed as it is, or moistened in water; soaked in broth and sprinkled with grated pecorino, it transforms into a simple and nourishing first course. BUONA CENA (of course).

I wouldn't really know anything about such a young man, therefore I would take advantage of the kindly granted space for a pleasant and delightful recipe for the upcoming Sunday Holy Lunch.

# CULURGIONIS DI PATATE #

- Ingredients for the dough: 500 g of flour; lard.

Ingredients for the filling: 300 g of salted pecorino; 600 g of potatoes; fresh mint.

For seasoning: Tomato sauce; aged grated pecorino.

Knead the flour with salted water and a knob of lard; after working it well, let it rest. Meanwhile, boil the potatoes, peel them, and mash them into a bowl; then add the grated pecorino, chopped mint, and garlic. As soon as the dough is ready, take the pasta, roll it out, and cut out circles about seven centimeters in diameter, on which a small amount of filling will be placed; the circle must be folded and closed by skilled hands that, pinching the edges, give it the shape of a spike. Cook the culurgionis in plenty of salted water, drain them, and layer them in a wide dish with tomato sauce and grated Sardinian pecorino; let it rest in a warm place for about ten minutes and serve. BUON PRANZO (of course).
