FREGOLA WITH CLAMS Ingrandisci questa immagine Preparation: The first thing to do to prepare fregola with clams is to take care of the clams: buy 1 kg of very fresh clams (arselle), check them one by one discarding the broken ones, and place them in a colander that you will put in a larger container, leaving them completely immersed in cold running water (a trickle) for one hour so that the mollusks expel any sand residues that will slip through the holes of the colander and settle at the bottom of the container. In a large pan, heat the oil with three cloves of garlic (crushed or whole if you want to remove them after browning) and let it sauté for a few minutes. Once cooked, decorate with a few clams in their shells, drizzle with a little raw oil, sprinkle with pepper, and serve while still hot.
