Ingredients:
800 g of donkey meat
50 g of butter
50 g of lard
1/2 onion
1 stalk of celery
1 carrot
2 cloves of garlic
2 tablespoons of tomato sauce
1 teaspoon of meat extract _
Cut the garlic cloves into slivers and insert them into small incisions made in the meat. In a pot, melt the butter and sauté the chopped vegetables along with the lard for a few minutes, then add the meat and sear it well, turning it often; deglaze with a ladle of hot water in which the meat extract and tomato sauce have been dissolved. Cover the pot and, over very low heat, cook the meat, turning it occasionally and adding more hot water as needed. Halfway through cooking, season with salt and pepper to taste. For an excellent stracotto, the flame should be kept very low, and the meat should cook for at least four hours: the result will be tender, flavorful meat and a velvety sauce like cream. It should be served cut into thick slices, generously covered with its sauce; a fresh vegetable salad, such as red radicchio, lettuce, etc., makes a good accompaniment.
