Cheese with worms is obtained, in a completely natural way, through the larvae of the cheese fly, Phiophila casei, an insect that lays its eggs in the cheese wheel, giving rise to numerous larvae that feed on the cheese itself, drawing nourishment from it. The flavor that results is very strong, spicy, and unique, and Sardinian producers have requested the European Union to protect the DOP mark for cheese produced with pecorino or fiore sardo.
In reality, this type of cheese is not only known in Sardinia but there are many regions in Italy that have produced cheese with worms. The traditional Sardinian method for producing casu marzu involves these steps:
* the pecorino cheese wheel is left in the air while waiting for the cheese fly to lay its eggs
* the larvae will colonize the entire wheel, feeding on the cheese
* once the larvae have consumed all of the cheese's core, and their numbers have dwindled, the wheel is split into two parts, removing the upper portion that appears hollowed out and reduced to a shell. The lower part consists of a cream with a very particular and strong flavor
* At this point, to drive away the last remaining little larvae, the exposed part of the wheel is left in the sun for about an hour, after which it can be started to be tasted. The cream spread on the famous pane carasau is truly excellent.
