A typical wild asparagus seller, Sardinian D.O.C. from the last century.

For those who don’t know, asparagus was consumed by the Egyptians and the ancient Romans, who even had manuals for its cultivation.

Asparagus is mentioned by Theophrastus, Cato, Pliny, and the chef of Imperial Rome (one Apicius), who meticulously described its cultivation and preparation methods in the kitchen.

From the 15th century, selection and cultivation began in France, reaching the height of popularity even in England in the 16th century.
