Clean and scrape the pig skin and cut out six equal squares. Season the inside of the pig skin with parsley, pecorino, salt, pepper, and chopped garlic. Roll up the squares and tie them with a string. In a pot of abundant salted water, cook the peas and the rolled pig skin until the beans are done. In a pan, sauté with oil, a clove of garlic, chili, and celery. Add the tomato and continue cooking for twenty minutes. Drain the beans and the pig skin and add them to the sauce, then continue cooking for another 15 minutes.

Miezzeca! From the Folk Apokaliptyko to the young Recsanthonio.. Anyway: I remember a very passionate friend of "extreme" techno dances who, about fifteen years ago, urged me to listen to a whole series of abulically teckno-kilometric CDs from this para-Artist Recsanthonio. To be completely honest, at the time, I found one or two tracks (also) enjoyable.. but the repeated listening of a completely honest work left me moderately unsatisfied (rather). Nice page.
