Chicken in cialòta.
Cialòta is a simple sauce made with garden ingredients and made flavorful by anchovies. The term is in the Langhe dialect. Ingredients for 8 people:
a chicken weighing about 2 kg, 2 salted anchovies, 3 tomatoes, 1/2 red, green, and yellow bell pepper, 2 onions, 2 carrots, 3 stalks of celery, 2 sprigs of rosemary, parsley, 2 cloves of garlic, 10 sage leaves, vinegar, extra virgin olive oil, salt, pepper.
Bring a pot of water to a boil with onion, carrot, celery stalk, rosemary, parsley, garlic clove, and salt. Submerge the chicken and simmer for about an hour and a half.
Let it cool and cut it into pieces. Meanwhile, chop the remaining vegetables and herbs and sauté them. Add the desalted anchovies cut into pieces, a glass of vinegar, and the chopped tomatoes. Season with salt and pepper.
Continue cooking for another five minutes, then pour the sauce over the pieces of chicken.

I haven’t heard the album, maybe just a few singles from the previous one. In any case, every decade has had its Led Zeppelin wannabes: it’s a cyclical thing and (I fear) inevitable like the peronospera of vines and the arrival of spring during marzopazzerello. In the 1980s, there were the highly touted Kingdom Come: practically carbon copies of Page and Plant. But, I mean, at that point, isn’t it better to listen to the originals directly? Then again, everyone enjoys what they consider most right and suited to their tastes.
