Pane Frattau
Pane frattau is a traditional dish from Sardinia, especially prepared in the Barbagia region and the central part of the island.
It is a dish made from simple ingredients.
Ingredients: 3 sheets of pane carasau, Tomato sauce, 1 egg, Pecorino, Vegetable broth,
Extra virgin olive oil, Salt, Pepper
Preparation:
Break the pane carasau into large pieces; heat the broth and quickly immerse the bread so it doesn’t soak, one piece at a time;
Place three pieces of pane carasau on a plate and cover with tomato sauce;
Top with a layer of pecorino and another three pieces of pane carasau;
Repeat the process for two more layers;
In a pot, bring water to a boil and prepare the poached egg;
Place the poached egg on the top layer and serve the pane frattau.
