But years and years of Piano Bar - and beyond - have led me to meet many Bartenders. They, seeing me drink shamelessly whatever came within reach, taught me a thing or two. "Marco: if you drink a Picolit and a Tocaj, they are both white wines, but that's the only thing they have in common." The same goes for whiskies. "Marco," says my mentor Gianni Razza, a great bartender and a part-time philosopher, "if you're going to drink a whisky, it has to be THIS one. You're not the type for peaty stuff." Ah!
