Holdsworth, given what you've reviewed and defined, I would say no, you won't find great jugglers on the instruments (except for the drummer), but I don't deny that an listening is worth it. Fede, I started with "Vegetale," but I recommend starting with this one, which is more accessible. Algol -15!!! ;)

I prefer "Jerusalem" even to "Sleep's Holy Mountain." In short, that's the idea behind Sleep, and I feel that in S'HM they almost seem "limited" by time and the concept of "song." In "Jerusalem," it's like you're sitting on their couch having a couple of beers while they enjoy playing. But, tastes vary.
