Chick sexing is a refined art that requires the concentration of a zen master and the dexterity of a neurosurgeon. The operator cradles the chick in their left hand and gently squeezes it to evert its intestines (if the operation is performed too violently, the intestines may turn inside out, killing the chick, and at that point, the gender becomes irrelevant). The sexer flips the animal over with their thumb and index finger and lifts the small flap covering the rear to expose the cloaca, a tiny orifice where the anus and genitals are located, and peers inside. In the simplest cases, those that can be explained, the sexer looks for a barely perceptible bump called the "perlina," which is the size of a pinhead. If the perlina is convex, the chick is male and is tossed to the left; if it is concave or flat, it’s a female, and the chick is slid down a chute to the right. These are the easy cases. Therefore, they must look for a group of spots, lines, and folds that, taken individually, are meaningless, but together reveal the sex of the chick. According to some estimates, to become competent, any respectable sexer must learn the configurations of a thousand orifices, a task made even more difficult by the fact that they must determine the sex of the chick almost "on the fly." There’s no time to think. If they hesitate for even a couple of seconds, their grip on the chick may make a pullet's orifice perfectly indistinguishable from that of a cockerel. Mistakes come at a high cost. In the 1960s, a breeder paid his sexers a penny for each correct interpretation and deducted thirty-five cents from their pay for each wrong reading. The most skilled operators can sex 1200 chicks per hour with an accuracy of 98.99 percent. In Japan, a small number of superstars in the field have learned to double their grip on the chicks and sex two at a time, at a rate of 1700 birds per hour. The reason why chick sexing is such a fascinating topic that involves professors of philosophy and cognitive psychologists and also interests me in my research on memory is that even the most skilled professionals in the most difficult and ambiguous cases cannot explain how they determine the gender. Their art is a mystery. They claim to "know" within three seconds whether a chick is male or female, but they can't explain how, even when put under pressure by researchers. They say it's all a matter of intuition. Essentially, the expert chick sexer perceives the world—at least the world of chicks' intimate parts—completely differently from anyone else. In the rear of a chick, they see things that normal people do not see.
