The first Sunday of June is dedicated to San Sancio and as the first course, snails or so-called giammette are cooked.
Ingredients:
1 kg garden snails,
oil,
onion,
500 g tomatoes,
parsley,
salt, pepper.
Preparation: Place the snails in a well-closed pan with some lettuce leaves so they can purge themselves. Keep them like this for two days. Once they have purged, wash them several times with water and salt. In a preferably earthenware pot, put the oil and chopped onion; when the onion is golden, add the snails and let them cook over medium heat for half an hour. Serve hot in the cooking pot.

After two days of letting the maruzze (the maruzze are larger snails than giammette) purge, wash them and boil them in salted water. Remove them from the shell and dip them in beaten egg and corn flour. Fry in hot oil.
