CRUMBLY CAKE - INGREDIENTS: 200g white flour, 200g fine yellow flour, tipo fioretto, 200g chopped almonds, 200g sugar, 100g lard, 100g butter (or if preferred, just 200g of butter or just 200g of lard), 2 egg yolks, grated lemon zest, vanilla. METHOD: mix the dry ingredients (white and yellow flours, almonds, sugar), along with the aromatics if desired and the egg yolks. Then add the fats (softened lard and butter) at room temperature. Quickly blend everything together, creating not a homogeneous dough, but small clumps (no larger than 1.5 cm in diameter), which will be sprinkled into the buttered mold. It should form a layer a couple of centimeters thick (using your hands, but without flattening the clumps), which will be baked in a preheated oven (175°) until golden and dry. To check for doneness, monitor the color of the cake which should be golden and have toasted almonds.

BRAISED DONKEY - INGREDIENTS For 4 people: 900 g of donkey meat; - 30 g of pancetta; - butter; - oil; - red wine; - salt; - pepper; - carrot; - onion; - celery; - tomato pulp or peeled tomatoes. METHOD Stick the meat with a few strips of pancetta. Heat two tablespoons of oil with a bit of butter and brown the meat in it. Once it has taken on an even color, splash it with a glass of red wine and let it evaporate. Add the sliced onion, carrot, and diced celery, along with the tomato pulp. Pour a ladle of hot water over everything. Once boiling, lower the heat and continue cooking for 2 hours. When cooking is complete, remove the meat and pass the sauce through a food mill, using it to garnish the serving dish.

INGREDIENTS:
- 1 kg of mixed pork cut into pieces (ribs or spare ribs, trotter, ear, snout or temple, rind);
- 50 g of fatback;
- 1 onion;
- 2 stalks of celery;
- 1 carrot;
- 1 tablespoon of tomato sauce;
- 4 small cabbage sausages;
- 1.5 kg of Savoy cabbage;
- salt;
- pepper.
METHOD
Heat a low pot, brown the cut pieces of pork well, add a mixture of onion and fatback and sauté with roughly chopped carrot and celery, then add the tomato sauce. Put a lid on, reduce the heat to the minimum, and cook for 30 minutes. Then add the sausages and the Savoy cabbage cut into large strips. Replace the lid and cook for about 1 hour.
